Mango Bread

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe mango (about 2 medium mangoes)
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a large mixing bowl, beat the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla extract and mashed mango.
  6. Add the dry ingredients to the mango mixture and stir until just combined.
  7. Fold in the chopped walnuts (optional).
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then remove from the pan and transfer to a wire rack to cool completely.
  11. Slice and serve the mango bread on its own or with a dollop of whipped cream or ice cream, if desired.
